Tasting Note

A juicy, soft red wine with lots of fruit appeal.  It has a pale ruby core with subtle legs.  The tantalising aromas include morello cherry and plum with a herbal scent of thyme.  On the palate, juicy ripe fruit marries well with mouth-watering acidity to give uplifting freshness.  Abundant fruit flavours of peppered strawberries and sour cherry mingle with soft tannins and a subtle smokiness from the oak.  It is youthful and vibrant with a long finish.

Food matching

Serve at room temperature as a great match for pork dishes including roast pork with crackling or Chinese pulled pork with a honey and soy dressing.  Also good with a fruity lamb tangine or spiced meatballs in tomato sauce.  It can even be served slightly chilled with monkfish wrapped in bacon.

Winemaking

The grapes were picked by hand and then barrel fermented in French Oak followed by 100% malolactic conversion. The wine has been matured for 12 months in a mixture of oak barrels and stainless steel tanks.
