A classic dry sparkling wine with a refined elegance. The colour is pale lemon straw with a steady stream of minute bubbles. It has appealing floral aromas of apple blossom interlaced with ripe melon and constance pear plus a delicate thread of minerality. On the palate the fine mousse marries citrus flavours of grapefruit and Sicilian lemon with a crystalline structure and zesty acidity. The autolytic character is subtle. It has excellent poise and a persistent finish.
Perfect for celebrations, served well-chilled as an aperitif alongside canapés such as smoked salmon blinis, angels-on-horseback, or with a seafood platter including oysters. Also good with white fish, such as sea bass, sea bream or creamy seafood gratin. Try it with local fish and chips!
This traditional, bottle-fermented, quality sparkling wine is made from Chardonnay, Pinot Noir and Pinot Meunier. These classic French varieties give this wine a creamy mousse, a fruity and harmonious taste and good length focussed on freshness. After hand-picking, the grapes were whole bunch pressed to obtain the finest juice. Tirage took place after 7 months. The wine was then left to mature on its lees for at least 18 months, with a further 2 months in the bottle after dosage.
